Mexican Corn Bread

Ingredients
- 1 cup cottage cheese
- 1 cup sharp cheddar cheese, shredded
- 2 cups self-rising cornmeal
- 1 cup creamed corn
- 1 onion, minced
- 1 large green bell pepper, finely chopped
- 2 eggs
- 1⁄3 cup vegetable oil
Directions
- Preheat oven to 350 degrees.
- Spray 11x7 pan with cooking spray.
- In a large bowl mix all ingredients together until well mixed.
- Pour into prepared pan.
- Bake for 1 hour.
- Serve warm with butter.
