Mexican Chicken in Packet (Great for Camping)

Ingredients
- 2 sheets aluminum foil
- 2 boneless skinless chicken breast halves
- 1⁄2 cup green chili salsa
- 2⁄3 cup refried beans
- 1⁄4 cup shredded cheddar cheese
- 2 romaine lettuce leaves
Directions
- PREHEAT oven to 450°F or grill to medium-high.
- CENTER one chicken breast half on each sheet of tin foil. Spoon salsa over chicken; top with beans.
- BRING up foil sides. Double fold top and ends to make airtight packet, leaving room for heat circulation inside. (think your old girl scout days). Repeat to make two packets.
- BAKE 15 to 18 minutes on a cookie sheet in oven OR GRILL 11 to 13 minutes in covered grill; sprinkle with cheese before serving.
- Serve on romaine leaves.
