Mexican Casserole

This Mexican style casserole is fairly healthy and really easy to throw together. I prepare it using a vegetarian version of ground beef, but I'm sure that it will also work well with any type of ground meat. Show more

Ready In: 1 hr 10 mins

  • 1 (1 1/2ounce) packet  burrito seasoning mix

Directions

  1. Heat the oven to 350.
  2. 1. Mix all of the ingredients together (except the cheese)
  3. 2. Pour into a sprayed casserole dish.
  4. 3. If the dish looks a bit too dry for you add a bit of broth or some more salsa.
  5. 4. Cover with the cheese.
  6. 5. Cover the dish and cook for about 40 minutes then uncover it and cook it for another 15 minutes or so.
  7. I serve this topped with lettuce, light sour cream, hot sauce and salsa (like a salad on top of the casserole).
