Mexican Bruschetta

Serves: 4-6
Ingredients
- 1 sourdough baguette
- 1 1⁄2 lbs tomatoes, seeded and diced
- 2 tablespoons olive oil
- 1 bunch fresh cilantro
- 6 garlic cloves, minced
- 1⁄2-1 tablespoon red pepper flakes
- 3⁄4 cup monterey jack cheese, shredded
Directions
- Preheat broiler.
- Slice baguette down the middle and brown ever-so-slightly under the broiler.
- Mix remaining ingredients and put on top of sliced bread.
- Place under broiler until the whole thing begins to brown.
- Remove and slice into serving pieces.
