Mexican Beef Tostadas

Ingredients
- 8 corn tortillas (6 inch)
- 17 ounces packaged beef roast
- 1 (14 ounce) can diced tomatoes with green chilies
- 1 medium green bell pepper, cut in strips
- 1⁄2 cup sour cream
- 1 medium lime, cut in wedges
Directions
- Wrap tortillas in paper towels. Microwave on high for 45-60 seconds or until warm. Cover and set aside.
- Microwave beef according to package directions.
- Meanwhile, in a small saucepan, heat tomatoes with juice for 4 minutes.
- Cut meat into slices and serve on warmed tortillas with tomatoes and green bell peppers. Top each with 1 tablespoon of sour cream and serve with lime wedges.
