Merryfield Apple Cake

Ingredients
- 3 cups flour
- 2 cups sugar
- 1 cup canola oil
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons vanilla
- 3 eggs
- 3 cups diced peeled cooking apples
- 1 cup chopped walnuts
- 1⁄2 cup chopped raisins
- confectioners' sugar
Directions
- Preheat oven to 325°F.
- Grease and flour two 8x8-inch square pans.
- Mix first 7 ingredients with mixer on low.
- Beat 3 more minutes.
- Stir in apples, nuts and raisins.
- Spread in pans, bake 1 hour.
- Cool.
- Place paper doily on top of cake.
- Sprinkle with confectioner's sugar.
- Remove doily.
