Mennonite Oatmeal Zucchini Bread

Ingredients
- 2 cups coconut sugar crystals
- 3 eggs
- 1 cup oil
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1⁄4 teaspoon baking soda
- 2 cups flour
- 1 cup quick oats
- 2 cups zucchini, grated
Directions
- Preheat oven to 350.
- Grease and flour pans.
- Cream splenda, eggs, vanilla and oil.
- Add dry ingredients.
- Mix till combined.
- Add in oats and zucchini, combine well.
- Bake at 350 for 1 hour or longer if needed.
