  1. In a medium bowl, whisk eggs well.
  2. Add salt and whisk again.
  3. In a frying pan, heat butter and saute the vegetables, except parsley, until almost done.
  4. Add the eggs to the sauteed vegetables.
  5. Add more salt if required.
  6. Garnish with more parsley and serve hot.
