Melitzanosalata

A greek eggplant salad, I have never tried this, but it looks good and I'm posting it for the World Tour 2005. Preparation time is an estimate!

• Serves: 6-8

Ingredients

• 500  g eggplants
• 1  onion, finely chopped
• 1  green pepper, finely chopped
• 200  g mayonnaise

Directions

1. Wash the eggplants, prick them with a fork and squeeze them out.
2. Bake them in a hot oven until they're soft.
3. Remove seeds and peel of the eggplant and puree it.
4. Mix with the onion, the pepper and the mayonnaise.
5. Serve chilled.
