Melanie's Shirred Eggs With Ham

This recipe comes from the "Gone With The Wind Cook Book - Famous Southern Cooking Recipes". There is a note in the foreward which I love: "Gone With The Wind told of a style of living. as well as a romantic drama, A way of living, playing, and eating that thrilled us all." **I want to keep this posted as it is in the book, but when we have it, I spray the ramekin with canola spray, and use 2 eggs in each one.   1. Break eggs into individual greased ramekins.
  2. Add a dash of salt and pepper, and dot with butter.
  3. Sprinkle with chopped ham and parsley.
  4. bake in a moderate oven (180C) for 15 minutes, or until eggs are firm.
