Ingredients

  • 2  medium zucchini, trimmed
  • 1  medium  yellow squash, trimmed
  • 2  large carrots, peeled
  • 14 cup butter or 14 cup margarine
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 1  lemon, juice of

Directions

  1. Shred zucchini, yellow squash and carrots.
  2. Melt butter in skillet over medium high heat.
  3. Add vegetables and quickly saute, about 3 minutes.
  4. Add salt, pepper, and lemon juice and toss gently.
  5. Serve immediately.
