  1. Combine the tomatoes and capers in a blender or food processor and process on low until you have a watery yet chunky dressing that will adhere to the salad.
  2. Place the vegetables and lettuce in a bowl, add the dressing, season with salt and pepper, and toss to coat everything evenly.
  3. Spoon the mixture evenly onto four plates and top each salad with 2 ounces of tuna.

  5. Look for vegetable mixes with include cauliflower, cabbage, broccoli, zucchini and carrots.
  6. Add ¼ cup basil to lift up the freshness for an additional 2 calories per serving.
  7. Try adding 1 teaspoon of prepared horseradish to the tomato and caper dressing for a delicious metabolism booster with only an added 2 calories!
