Mediterranean Tortellini Pasta Salad

Ingredients
- 1 (19 ounce) package frozen cheese tortellini
- 2 cups fresh baby spinach leaves (or 10 ounces frozen chopped spinach)
- 1 (6 ounce) can small black olives
- 1 pint cherry tomatoes, halfed
- 1⁄2 chopped red onion
- 1⁄3 cup parmesan cheese
- 5 ounces feta cheese
- 1⁄4 cup olive oil
- 1⁄4 cup balsamic vinegar
Directions
- Boil and rinse tortellini. Blanch spinach if using fresh. Defrost and drain spinach if using frozen.
- Combine tortellini, spinach, olives, tomatoes, onion.
- Mix oil and vinegar, then pour over salad mixture.
- Add cheeses.
- Enjoy!
