Mediterranean Meatloaf a la Clara

One of my favorite dishs to feed a crowd, invented some months ago from the sratch. It is very easy to prepare and tastes just wonderfully. I always serve it with spicy tomato sauce and white bean salad. Show more

  1. ~~~First layer: Potatoes~~~.
  2. Boil potatoes (prepare meatloaf in the meantime), peel and cut them into 1/2" thick slices.
  3. Layer them in a baking dish.
  4. Whisk heavy cream and onion soup mix.
  5. Pour over potatoes.
  6. ~~~Second layer: Meatloaf~~~.
  7. Melt the butter in a pot.
  8. Add onions and frozen herbs and saute for about 5 minutes; stir well.
  9. Fill in a large bowl and add mincemeat, breadcrumbs, eggs, frozen vegetables, olives and spices.
  10. Mix together.
  11. Press into baking dish on top of the potatoes.
  12. Bake, uncovered, at 375 degrees for 1 hour.
  13. In the meantime prepare the~~~ Third Layer: Bechamel-Cheese-Sauce~~~.
  14. Melt butter in a pot.
  15. Add flour and whisk constantly.
  16. Add milk and whisk until consistence is creamy and free of lumps.
  17. Add cheese and spices and whisk well until cheese is melted.
  18. Remove meatloaf from oven, pour sauce over it.
  19. Reduce heat at 300 degrees and bake an additional 30 minutes.
