- 1 small organic red onion, finely chopped
- 1 small organic cucumber, seeded and chopped
- 1 small red bell pepper, finely chopped
- 2 tablespoons parsley, leaf finely chopped
- 1⁄4 cup olive
- 1 organic lemon
- 1⁄4 cup extra virgin olive oil
