Ingredients

  •  cooked quinoa, - 1/2 cup
  •  roasted red pepper, rinsed-1bowl
  •  olive, oil-1 tsp
  •  garlic clove, minced- 1
  •  paprika, - 1 tsp
  •  cumin, powder- a pinch
  •  red pepper, as per taste
  •  olive, chopped-1tbsp
  •  onion, finely chopped -2tbsp
  •  chickpeas, boiled - 1/4 cup
  •  cucumber, diced -1/2 tsp
  •  fresh parsley, finely chopped- 1 tbsp

Directions

  1. Step 1.
  2. Add peppers, 1/2 tsp oil, garlic, paprika, cumin and crushed red pepper (if using) in a mini food processor. Puree until fairly smooth.
  3. Step 2.
  4. Combine quinoa, olives, onion and the remaining 1/2 tsp oil in a medium bowl.
  5. Step 3.
  6. In a bowl add quinoa mixture and top with chickpeas, cucumber and the red pepper sauce. Sprinkle with parsley.
