Meatloaf Shepherd's Pie

Ingredients
Meatloaf
- 1 lb hamburger
- 10 saltine crackers, crushed
- 2 eggs, slightly beaten
- 2 teaspoons dried parsley
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon onion powder
Beans
- 2 cups frozen green beans
- 1 (10 3/4ounce) can cream of mushroom soup
- 1 (2 7/8ounce) can French-fried onions (Durkee)
- 1⁄2 cup milk
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon salt
Potatoes
- 6 large potatoes, peeled and quartered
- 3 tablespoons butter
- 1⁄4 cup milk
- 1⁄2 teaspoon garlic salt
- 1 teaspoon Mrs. Dash seasoning mix
- paprika
Directions
- Preheat oven to 400 degrees.
- Mix all ingredients for meatloaf together.
- Spread evenly into a 9" square baking pan.
- Bake for 20 minutes.
- Cook frozen green beans with 2 tablespoons.
- water in a microwave safe container for 5 minutes.
- Stir beans, and microwave for another 5 minutes.
- Drain the beans and add mushroom soup, 1/2 can of the french fried onions, milk, salt, and pepper.
- Microwave this for an additional 3 minutes.
- Boil the potatoes in enough water to cover for approximately 20 minutes, or until tender enough to mash.
- Drain potatoes and mash with butter, milk, garlic salt, and Mrs. Dash Seasoning.
- (You may wish to add additional milk if the potatoes are thicker than you prefer.) Spread bean mixture over meatloaf layer.
- Spread mashed potatoes over bean layer.
- Sprinkle with the remaining 1/2 can french fried onions and paprika if desired.
- Bake 15 minutes to brown the top.
