Meatloaf Muffins

Ingredients
- 1 lb ground beef or 1 lb chicken
- 1 egg
- 1⁄2 cup almond flour
- 1 carrot, grated
- 1 sweet onion, diced
- 1 teaspoon sea salt
- 1⁄4 teaspoon garlic powder
- 1⁄4 teaspoon lemongrass, dried
- 1⁄4 teaspoon chili powder
- 1 cup salsa
- 1 teaspoon Worcestershire sauce
- 1 teaspoon mustard
Directions
- Preheat oven to 350 degrees.
- Mix all ingredients together in bowl (only 1/2 of salsa -- save other 1/2 for topping).
- Grease muffin pan or line with muffin cups.
- Fill muffin cups with meat.
- Top meat with remaining salsa.
- Cook 30 minutes (may vary slightly depending on muffin size).
