Meatloaf Marvel

Ingredients

• 1  lb  ground round
• 1⁄4 cup  chopped green bell pepper
• 1⁄4 cup  chopped red bell pepper
• 3⁄4 cup  chopped onion
• 3  garlic cloves, minced
• 1⁄2 cup  whole wheat bread crumbs
• 1  tablespoon reduced sodium soy sauce
• 1  tablespoon mustard
•  black pepper
• 1  baby dill pickle, chopped

Directions

1. Mix all ingredients together and mold into long, round loaf, about 2 inches thick.
2. Arrange in circle on 9-inch pie plate or deep casserole.
3. Microwave on high 3 to 4 minutes.
4. Baste with sauce and drain off excess.
5. After rotating plate, microwave on high another 3 to 4 minutes.
