Ingredients
Meatloaf
- 2 lbs ground beef
- 1 1⁄4 ounces Lipton Onion Soup Mix
- 1⁄2 cup diced onion
- 1 -2 garlic clove, minced
- 1⁄4 teaspoon pepper
- 1⁄2 teaspoon salt
- 2 eggs, beaten
- 1⁄3 cup chili sauce
- 1 serrano pepper, diced (optional)
- up to 1 cup cracker, crushed
Sauce
- 2⁄3 cup chili sauce
- 3 tablespoons wine vinegar
- 2 teaspoons Worcestershire sauce
- 1⁄2 cup brown sugar, packed
- 1 1⁄2 teaspoons brown mustard
Directions
- Preheat oven to 350°F.
- Saute onions, garlic, serrano pepper in 1 tbsp oil in a small pan until onions are translucent.
- Mix the meatloaf ingredients together, mixing in the crackers last until desired consistency (use no more than 1 cup).
- Shape the meatloaf mixture into a loaf and place in a lightly greased 9x13 baking dish.
- Place meatloaf into oven and set timer for 60 minutes.
- Mix sauce ingredients together in a small saucepan, bring to boil and simmer for 5 minutes.
- Baste meatloaf with sauce after first 15 minutes of cooking and every 15 minutes afterwards.
- Bake meatloaf until internal temperature reaches 155 F (will rise to 160 F after removing from oven), about 45 min to 1 hr of cooking total.
- Remove from oven and let rest for 5 minutes before slicing.
- Serve meatloaf with remaining sauce.
