Meatloaf

This recipe came from a friend in Payette, ID from our church, Alma Lee Alexander.

Ingredients

• 2  lbs ground beef
• 1⁄4 cup green pepper, chopped
• 3⁄4 cup onion, chopped
• 2  eggs, beaten
• 1  cup sharp cheddar cheese, cut in 1/2-inch cubes
• 2  cups  breadcrumbs
• 1 1⁄2 cups tomato juice
• 1  teaspoon salt
• 1⁄4 teaspoon thyme

Directions

1. Mix all ingredients.
2. Place in 9x9-inch pan.
3. Bake in 350°F oven for 1 1/4 hours.
4. Drain well. Serve.
