Meat and Potatoes, Boer Style

Ingredients
- 8 ounces ground beef, cooked
- 4 ounces onions, chopped
- 1 teaspoon curry powder
- 2 apricots, peeled, chopped, pitted
- 2 slices bread, crumbs
- 1⁄2 cup evaporated skim milk
- salt
- pepper
- 1⁄2 cup tomato puree
- 1 (1 ounce) packet instant beef bouillon
- 1 teaspoon fresh parsley, chopped
Directions
- Place beef in mixing bowl, lightly brown onions in a nonstick pan.
- Add to beef the curry powder, apricots, tomato, bread crumbs and milk.
- Mix well. Season to taste.
- Shape into a loaf, place bay leaf on top and wrap with aluminum foil.
- Bake at 375 degrees until firm.
- Heat tomato puree; add broth mix.
- Divide loaf equally and serve half of sauce over each portion.
- Sprinkle with parsley.
