Mayonnaise (with Variations)

Yields: 1 cup
Ingredients
- 1⁄4 teaspoon dry mustard
- 1⁄2 teaspoon salt
- pepper
- 1 pinch paprika
- 1 egg yolk
- 2 tablespoons vinegar (or lemon juice)
- 1 cup salad oil
Directions
- Mix seasonings. Add yolk. Mix well. Add 1 tbsp vinegar. Add salad oil, a few drops at a time, beating constantly. As mixture thickens, oil may be added more quickly. Add remaining vinegar.
- For RUSSIAN dressing: to 1 cup of mayonnaise, add 1/2 cup chili sauce and 1 TBSP lemon juice.
- for THOUSAND ISLAND dressing: to 1 cup of mayonnaise, add 1/4 cup chili sauce, 2 TBSP chopped green pepper, 1 chopped hard cooked egg and 2 TBSP chopped green olives.
