Mayonnaise Dressing With Olive Oil

Ingredients
- 1 teaspoon water
- 1 egg
- 1 large egg yolk
- 1 tablespoon fresh lemon juice, plus
- 1 teaspoon fresh lemon juice
- 1⁄4 teaspoon white vinegar
- 1⁄8 teaspoon sugar
- 1⁄4 teaspoon table salt
- white pepper, to taste (if available, otherwise black)
- 3⁄4 cup extra virgin olive oil or 3⁄4 cup regular olive oil
- 1⁄2 cup olive oil
Directions
- In food processor, combine water, egg, yolk, lemon juice, white vinegar, salt, sugar, and pepper until combined, about 10 seconds.
- With machine running, gradually add oil in slow steady stream (process should take about 30 seconds); scrape down sides of bowl with rubber spatula and process 5 seconds longer. Adjust seasoning with additional salt and pepper, if needed.
