Maya Angelou -- Her Childhood Favorite, Grandmother's Red Rice

Yields: 3 Cups
Ingredients
- 3 slices bacon
- 1⁄2 cup chopped onion
- 1⁄4 cup chopped red pepper
- 1 (14 1/2ounce) can chopped tomatoes (reserve the juice)
- 1 tablespoon tomato paste
- 1⁄4 teaspoon salt
- pepper
- 2 cups cooked rice
- 1 cup tomato juice and water
Directions
- Fry the bacon and then chop the cooked bacon, leaving about 1 TBS of bacon grease in the pan (cool the remaining grease for any use later).
- Cook the chopped onion and peppers a few minutes. Then add everything else (having drained the tomato juice from the can and topped off with water to make 1 cup of liquid).
- Bring to a boil and cook 3-4 minutes. Stir.
- Turn the heat down to low, cover and cook another 15 minutes or so.
