Matzos Sponge Cake (For Passover)

- Preheat oven to 350 F, a moderate oven.
- Beat yolks until light.
- add sugar and beat again then add a pinch of salt, the lemon, then the matzos cake meal.
- lastly fold in the whites beaten until stiff but not dry.
- Bake in 10 inch spring form 45 minutes or in two layers. We use don't use a spring form pan but we use a tube pan or bundt.
