Maso's Low Carb Granola

Yields: 4 cups
Ingredients
- 1 cup coconut flour
- 1⁄3 cup flax seed
- 1⁄3 cup poppy seed
- 1⁄3 sunflower seeds
- 1⁄3 cup chia seeds
- 1⁄3 sesame seeds
- 1⁄2 cup slivered almonds
- 1 tablespoon psyllium, husk powder
- 1 tablespoon cinnamon
- 2 tablespoons Xylitol sweetener (sugar alcohol)
- 2 cups boiling water
- 1⁄4 cup coconut oil
- 2 tablespoons vanilla extract
Directions
- Preheat the oven to bake at 300 degrees F.
- Mix all the dry ingredients in a large bowl.
- Boil the water and melt the coconut oil if you keep it in the refrigerator to liquify.
- Add the vanilla to the hot water/coconut oil liquid.
- Pour the hot liquids into the bowl of dry ingredients and make a sticky heavy batter with lots of large chunks of seeds that looks like raw granola.
- Bake for 2 hours using a spatula or wooden utensil to break apart the clumps of granola and turn them over for even cooking.
- When the granola looks evenly browned, it's done. Take out of oven and cool on a rack.
- Treat as a granola, so you can pair with berries and yogurt or use milk as many would do with cereal. Lots of varied flavors with all the seeds.
