Mascarpone Substitute

Ingredients
- 3 egg yolks
- 1⁄2 cup sugar
- 1⁄3 cup milk
- 1 (15 ounce) container ricotta cheese
- 1 cup heavy cream
Directions
- Whisk egg yolks, sugar, and milk--simmer 2-3 minutes. Cool, and fold in ricotta cheese. In a separate bowl whip the heavy cream until it peaks. Add whipped heavy cream and milk mixture in a food processor until it forms a homogeneous cream.
