Masala Egg Rice

Ingredients
- 3 cups rice, boiled
- 2 medium tomatoes, finely chopped
- 1⁄4 teaspoon turmeric powder
- 1⁄2 teaspoon chili powder
- 2 tablespoons oil
masala omlette
- 3 eggs, beaten
- 2 green chilies, finely chopped
- 3 tablespoons mint leaves, and
- coriander leaves, finely chopped
- 1 large onion, finely chopped
- 2 tablespoons oil
- salt
Directions
- Mix all the ingredients of omlette except oil and beat well. Heat oil in a pan, pour in the egg mixture and make an omlette. Fry both sides of omlette. Roll up the omlette and cut into small pieces.
- Heat oil in a large saucepan. Add tomatoes and fry on medium heat till tomatoes are cooked. Add masala omlette, salt, chilli powder and turmeric powder. Mix well. Add boiled rice.
- Stir and cover the pan and leave on low heat for 3 - 5 minutes.
