Directions

  1. Beat together almond paste, sugar and rose water (or egg white) into a workable consistancy.
  2. Shape into a hedgehog body, head, snout and ears.
  3. The inside of ears may be colored with cinnamon.
  4. Carefully attach body parts, then add cloves for eyes.
  5. Press slivered almonds into body so they stand up resembling spines.
  6. Air dry.
