Mary Ann's Zucchini Bread

Ingredients
- 3 eggs
- 2 cups sugar
- 6 teaspoons cinnamon
- 6 teaspoons vanilla extract
- 1 cup oil
- 2 cups grated zucchini
- 1 teaspoon salt
- 2 cups flour
- 1⁄4 teaspoon baking powder
- 2 teaspoons baking soda
Directions
- In a large bowl mix eggs, sugar, and oil together.
- Add zucchini.This will be a soupy-like consistency.
- Add vanilla.
- Mix in dry ingredients.
- Grease and flour 2 loaf pans.
- Bake at 350°F for 1 hour.
- This can be wrapped in aluminum foil, put in ziploc bags, and frozen when cool.
