Marvelous Pumpkin Muffins

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1⁄2 cup unsalted butter, melted and cooled
- 3⁄4 cup brown sugar
- 1 cup canned pumpkin puree
- 4 egg whites
- 1 teaspoon vanilla extract
- 1⁄3 cup golden raisin
Directions
- Preheat oven to 400°F Line or greade muffin cups.
- Whisk together dry ingredients.
- Whisk together butter, brown sugar, pumpkin, egg whites, and vanilla. Add to dry ingredients and stir till combined, Do not overmix. Fold in raisins.
- Divide batter among muffin cups. Bake at 400F until a toothpick poked into the center comes out clean (about 30 min). Cool for 10 min, then remove from pan and cool completely.
