Mars Bar Cheesecake Bites

Yields: 24 pieces

Ingredients

  • 3 (1 7/8ounce)  Mars dark chocolate bars
  • 34 cup  chocolate wafer crumbs
  • 2  tablespoons  melted butter
  • 1 (8 ounce) package cream cheese, brick style (softened)
  • 14 cup granulated sugar
  • 1  tablespoon milk
  • 2  eggs
  • 1  teaspoon vanilla extract
  •  whipped cream (to garnish)

Directions

  1. Chill the Mars bars for at least 20 minutes.
  2. Slice each bar into 16 slices. Keep in fridge until ready to use.
  3. Preheat oven to 350°F.
  4. Line 24 mini muffin pans with paper liners.
  5. Toss the crumbs with the butter and divide evenly among the cups. Press lightly into the bottom of the cups to make a crust.
  6. Bake 5 minutes. Cool.
  7. Place 1 Mars Bar slice in each muffin cup. Reserve.
  8. Beat the cream cheese with the sugar and milk until very smooth.
  9. Beat in eggs one at a time.
  10. Stir in Vanilla.
  11. Divide evenly into muffin cups over Mars slice to fill each cup.
  12. Bake 12 - 14 minutes.
  13. Cool to room temperature.
  14. Chill till ready to serve.
  15. Just before serving garnish each one with a dollop of Whipped cream, and a Mars slice.
