Marinated Salmon Fillets

Ingredients

  • 1 12 lbs  skinless salmon or 1 12 lbs  haddock or 1 12 lbs  orange roughy fillets, fresh or thawed frozen,1 inch thick
  • 13 cup  bottled  Italian dressing
  • 14 cup lemon juice
  • 3  tablespoons honey

Directions

  1. Rinse fish; pat dry.
  2. Cut into 6 serving-sized pieces if necessary.
  3. Place fish in shallow dish.
  4. For marinade, combine salad dressing, lemon juice and honey in small bowl.
  5. Pour over fish.
  6. Marinate at room temperature for 30 minutes or in rrefrigerator for 1 to 2 hours.
  7. Drain fish reserving marinade.
  8. Place fish in well greased grill basket.
  9. Tuck under any thin edges.
  10. Grill fish on rack of uncovered grill directly over medium coals 8 to 12 minutes or until fish flakes easily when tested with fork, turning once and brushing with occasionally with marinade during the first half of cooking.
  11. Or broil on greased unheated rack of broiler pan, tucking under any thin edges, 4 inches from heat 8 to 12 minutes, turning once and brushing occasionally with marinade for the first half of cooking.
  12. Discard ant remaining marinade.
