Marinated Potato Salad

Serves: 6-8
Ingredients
- 3 lbs potatoes
- 1⁄2 cup diced carrot
- 1 1⁄2 cups green peppers, sliced thin
- 6 scallions, sliced
- 3⁄4 cup peas
- 1⁄4 cup minced parsley
- 1 teaspoon salt
- 2⁄3 cup olive oil
- 2⁄3 cup cider vinegar
- 1⁄2 teaspoon dried dill
Directions
- Wash potatoes well. Cover them with water in a pot and bring to a boil (don’t cut or peel the potatoes).
- When just tender, drain and rinse with cold water.
- Cut into small cubes when cool enough to handle.
- Put potatoes into a medium bowl and add the rest of the ingredients.
- Stir well, chill at least one hour before serving.
