Marinated Garbanzos (Chickpeas)

Yields: 2 1/2 cups
Ingredients
- 20 ounces garbanzo beans, drained
- 1⁄2 cup oil
- 3 tablespoons vinegar
- 1⁄2 cup chopped fresh parsley
- 1⁄4 cup chopped scallion
- 1 dash garlic salt
- salt and pepper
Directions
- Combine all ingredients and allow to marinate in the refrigerator for at least 2 hours.
- Drain.
- Serve with toast rounds or as part of an antipasto tray.
