Marinated Cucumbers and Onions

Yields: 6 1/4 cup servings
Ingredients
- 3⁄4 cup white vinegar (doesn't work well with cider vinegar)
- 3⁄4 cup soy sauce
- 2 whole cucumbers (peeled and sliced)
- 1⁄2 medium sized yellow sweet onion (sliced)
- pepper (optional)
Directions
- Mix vinegar and soy sauce together in bowl.
- Peel and slice cucumbers into coins.
- Slice onion into rings.
- Stir sauce again add veggies.
- Let marinate for 5 minutes and serve (longer for a stronger taste).
- Pepper to taste.
