Marinated Carrots

Yields: 4 cups approximately
Ingredients
- 2 lbs carrots, thinly sliced diagonally
- 1 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 tablespoon mustard, yellow
- 1⁄2 cup salad oil
- 3⁄4 cup sugar
- 3⁄4 cup cider vinegar
- 10 3⁄4 ounces tomato soup, condensed can
- 1 onion, large chopped
- 1 green pepper, chopped
Directions
- Boil carrots 5 minutes. Drain and cool by running under cold water.
- In a medium bowl, mix salt, black pepper and mustard. Add oil and whisk to blend. Add sugar, vinegar and soup. Whisk till well blended. Stir in onion, green pepper and carrots. Cover and chill to marinate at least 1 day to allow flavors to meld.
