Marinated Calamari Antipasti

Yields: 1 3/4 cups
Ingredients
- 1 tablespoon olive oil
- 8 ounces calamari, cleaned and cut in rounds
- 1⁄2 cup cherry tomatoes, cut in half
- 1⁄4 cup thinly sliced onion
- 1⁄4 cup pitted kalamata olive, halved
- 1 tablespoon lemon juice
- 1 teaspoon fresh basil leaf, coarsely chopped
- 1 teaspoon fresh thyme leave
Directions
- In a large skillet, heat oil over high heat. Add calamari, tomatoes, onion and olives and sauté until calamari is soft and opaque, about 3 minutes.
- Remove from heat and add lemon juice, basil and thyme. Toss well.
