Marinated Asparagus With Sesame

This is a Sunset recipe that I've been making for at least 25 years. Its simple and low in fat. It is best served cold. Show more

Serves: 4

Ingredients

  • 1  lb asparagus
  • 14 cup  seasoned rice wine vinegar
  • 1  tablespoon  sesame oil
  • 1  tablespoon sesame seeds, toasted
  •  salt

Directions

  1. Snap off tough ends of asparagus.
  2. Bring about one inch of water to boil in a wide pot or frying pan.
  3. Add asparagus, off heat, and cover; let steam for 3 - 5 minutes, until asparagus is bright green and crisp-tender.
  4. Drain; immerse asparagus in ice water until cool, then drain again.
  5. Place asparagus in shallow container and add sesame oil and rice wine vinegar.
  6. Cover and refrigerate until cold, about 30 minutes or more.
  7. When ready to serve, sprinkle with toasted sesame seeds.
