Ingredients
- 1⁄4 cup olive oil
- 1 teaspoon grated lime rind
- 2 1⁄2 tablespoons fresh lime juice
- 2 tablespoons Worcestershire sauce
- 1 1⁄2 teaspoons ground cumin
- 1 teaspoon salt
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon fresh coarse ground black pepper
- 2 garlic cloves, minced
- 1 (14 1/4ounce) can low-salt vegetable broth
Directions
- Mix altogether and marinate vegetables for 4 hours minimum.
