Margarita Cupcakes

I made these for Cinco de Mayo this year. They were absolutely delicious! I used Sauza Margarita Mix with the tequila already in it. It was only $9 for a box, which is equal to a 1.75 L. Very tasty! I also added some lime juice for extra zing! For the frosting, I mixed in a little bit of margarita mix with the cream cheese frosting and added some lime juice. I put it in a ziploc bag so that I could pipe the frosting easily. Be creative and add a little straw, umbrella, or a sugared lime! These are sure to be a hit at any party! Show more

Yields: 24 muffins

Ingredients

  • 1 (16 ounce) box  white cake mix
  • 9 12 ounces  margarita mix
  • 12 ounce  orange juice
  • 3  large  egg whites
  • 2  tablespoons  vegetable oil
  • 1  lime, zest of
  • 1 (16 ounce) can  cream cheese frosting
  •  green sprinkles

Directions

  1. Preheat oven to 350 Degrees.
  2. Line 24 muffin tins.
  3. Mix wet ingredients.
  4. Add to dry ingredients.
  5. Beat low for 30 sec.
  6. Beat Medium for 2 minute.
  7. Fill each one 2/3 of the way full.
  8. Bake 20-25 minutes.
  9. Frost after cooling.
  10. Top with green sprinkles.
