Marathon Mud Pie

A creamy chocolate peanut butter pudding parfait for breakfast... and before a long run? Why not? Take.a couple minutes to toss the ingredients together the night before and it's ready to dish first thing in the morning! Loaded with fiber, protein, healthy fats and a little caffeine from the cacao, it's the perfect breakfast to sustain you through a long workout. Ingredients

  • 13 cup rolled oats
  • 13 cup  Greek yogurt
  • 14 cup low-fat milk
  • 14 cup  mashed banana
  • 1  tablespoon  natural-style peanut butter (just peanuts, no sugar or salt added)
  • 2  tablespoons  raw cacao powder
  • 1  tablespoon  chia seeds
  • 1  dash fine sea salt

Directions

  1. In a small bowl, mix together all ingredients and put in the fridge for at least an hour or overnight. That's it!
  2. TO MAKE A PARFAIT: After pudding is set, spoon 1/3 of it into a fancy dish and top with a dollop of greek yogurt and 3 banana slices. Repeat 2 more times and drizzle a little peanut butter on top.
