Maple Sweet Potato Casserole

Ingredients
- 1⁄3 cup yellow cornmeal
- 1 1⁄2 cups skim milk
- 2 tablespoons butter
- 2 cups mashed cooked, sweet potatoes
- 1⁄3 cup maple syrup (the real deal)
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon ground allspice
- 1⁄4 teaspoon pepper
- 2 eggs, lightly beaten
Directions
- Place cornmeal in a medium saucepan. Gradually add milk, stirring with a wire wisk until blended.
- Bring to a boil and reduce heat to medium.
- Cook uncovered for 2 minutes, stirring constantly with a wire wisk.
- Remove from heat, stir in butter, and set aside.
- Combine sweet potatoes and next 6 ingredients in a large bowl.
- Stir until well-blended.
- Gradually add cornmeal mixture, stirring constantly.
- Pour into a 1 1/2 quart casserole dish coated with cooking spray.
- Bake at 350 degrees for 45 minutes, uncovered.
- Let stand 10 minutes before serving.
