Maple Buttermilk Bread (Bread Machine)

Ingredients
1 1/2 pound loaf
- 1 cup water, plus
- 1 tablespoon water
- 1 1⁄2 tablespoons unsalted butter, melted
- 3 tablespoons maple syrup
- 3 cups bread flour
- 1⁄3 cup dry dry buttermilk
- 1 tablespoon gluten
- 1 1⁄2 teaspoons salt
- 1 3⁄4 teaspoons fast rising yeast (or 2 1/4 t. bread machine yeast)
2 pound loaf
- 1 3⁄8 cups water
- 2 tablespoons unsalted butter, melted
- 1⁄4 cup maple syrup, plus
- 1 tablespoon maple syrup
- 4 cups bread flour
- 1⁄2 cup dry dry buttermilk
- 1 tablespoon gluten, plus
- 1 teaspoon gluten
- 2 teaspoons salt
- 2 1⁄4 teaspoons fast rising yeast (or 2 3/4 t. bread machine yeast)
Directions
- Add all ingredients to the bread machine pan according to the order in the manufacturer’s instructions.
- Set crust on medium and program for the Basic cycle; press start.
- When the baking cycle ends, immediately remove the bread from the pan and place it on a rack; let cool to room temperature before slicing.
