Maple Almond Ricotta Crepes

Ingredients
- 10 crepes
- 3⁄4 cup almonds
- 2 tablespoons water
- 3 cups ricotta cheese
- 1⁄2 cup maple syrup
- 1 teaspoon almond extract
- fresh fruit
Directions
- Put almonds into a food processor and grind until very fine.
- Add water and blend into a smooth paste.
- In a medium bowl, mix ground almonds with ricotta cheese, maple syrup and almond extract.
- Put 1/3 cup filling across the middle of each crepe. If desired, sprinkle with fresh fruit.
- Roll each crepe up. Bake 10 minutes at 375 in a buttered 9 by 12 inch baking dish.
