Maple Almond Ricotta Crepes

Ingredients

  • 10  crepes
  • 34 cup  almonds
  • 2  tablespoons water
  • 3  cups ricotta cheese
  • 12 cup maple syrup
  • 1  teaspoon  almond extract
  •  fresh fruit

Directions

  1. Put almonds into a food processor and grind until very fine.
  2. Add water and blend into a smooth paste.
  3. In a medium bowl, mix ground almonds with ricotta cheese, maple syrup and almond extract.
  4. Put 1/3 cup filling across the middle of each crepe. If desired, sprinkle with fresh fruit.
  5. Roll each crepe up. Bake 10 minutes at 375 in a buttered 9 by 12 inch baking dish.
