Mango Relish

Yields: 2 1/2 cups
Ingredients
- 1 mango, peeled and diced
- 1 medium red bell pepper, diced
- 1 cucumber, diced with seeds removed
- 2 chili peppers, green, cut into rings
- 1⁄4 cup of fresh mint, chopped
- 1 medium green bell pepper, diced
- 1 medium onion, minced
- 1⁄4 cup malt vinegar
- 2 tablespoons chili-garlic sauce
Directions
- In bowl, combine mango, red bell pepper, cucumber, green chilies, mint, green bell pepper, onions, malt vinegar and Garlic Chili Pepper Sauce.
- Blend together well.
- Cover and refrigerate for at least one hour.
