Mango Coleslaw - for Freezing

Serves: 6-8
Ingredients
- 1 medium cabbage
- 1 carrot, grated
- 1 mango, chopped fine
- 1 teaspoon salt
Syrup
- 1 cup vinegar
- 2 cups sugar
- 1⁄2 cup water
- 1 tablespoon celery seed
- 1 tablespoon mustard seeds
Directions
- Grate cabbage and add salt. Let stand for 1 hour.
- Squeeze out and then add carrot and mango. Set aside.
- Boil syrup ingredients for 1 minute.
- Let stand until lukewarm; pour over cabbage.
- Freeze in containers the size you need for your family's needs.
