Mango Chutney

Yields: 5 cups
Ingredients
- 3 1⁄4 cups mangoes, fresh, peeled and chopped into 1/2-inch cubes
- 2 1⁄2 cups white sugar
- 1 cup brown sugar, packed
- 1 cup apple cider vinegar
- 1⁄2 cup raisins
- 1⁄4 cup ginger, fresh grated
- 2 tablespoons garlic, minced
- 2 tablespoons salt
- 1 teaspoon ground cloves
- 1⁄2-1 teaspoon hot pepper, from a jar finely chopped
Directions
- Make sure mangos are not too ripe or soft. They're easier to peel.
- Put into a large bowl; add sugars and stir well until sugars liquify. Cover and let set on counter overnight.
- Pour into a large saucepan and add the rest of ingredients. Stir well. Bring to a boil, then reduce heat to a simmer. Let simmer, stirring occasionally, 45 minutes or longer, or until as thick as gravy. Pour into clean jars, (should make about 1 quart and a cup extra), and keep refrigerated. Will keep months.
