Mango Chutney

Yields: 1 1/2 cups
Ingredients
- 2 tablespoons vegetable oil
- 1 large sweet onion, sliced thinly with the grain
- 2 cups mangoes, peeled and diced (2 ripe mangoes)
- 2 tablespoons granulated sugar
- 2 teaspoons dry mustard
- 1⁄2 teaspoon ground coriander
- 1 tablespoon water
- 6 drops hot sauce (or to taste)
- fresh ground black pepper
Directions
- In a small saucepan, heat oil on low and add sliced onion.
- Cook, uncovered,until onion is soft and evenly browned (about 40 minutes).
- Mix in mangoes, sugar, mustard, coriander and water.
- Cover and cook about 20 minutes, until mangoes start to break down.
- Stir, uncovered, 3 to 5 minutes to thicken chutney.
- Season with Tabasco and black pepper.
